Stuffed Lobster Tails

Lots of seafood, and a flambe too - if these Stuffed Lobster Tails don't impress your guests, nothing will!

4 lobster tails
4 Tbsp butter
4 oz shrimp
4 oz crab meat
4 oz scallops
2/3 cup mushrooms,sliced
2 Tbsp brandy
2 Tbsp butter
3 Tbsp flour
Dash of paprika
1.5 cups milk
1/4 cup dry white wine
1/3 cup fresh parmesan cheese, grated

Remove meat from lobster tails and cut into bite size pieces. Keep the shells.

Melt the butter in frying pan. Add lobster meat, shrimp, crab meat, and scallops. Saute for 2 minutes. Add mushrooms. Stir and continue cooking, until shrimp turns pink. Remove from heat.

You'll want to do this part in front of your guests. Pour brandy over seafood, get a lighter, and light it! There's the wow factor! Set aside after the flame goes out.

Melt butter, stir in flour and paprika, and cook over low for 2 minutes. Stir in milk slowly. Cook until sauce has thickened. Add wine and stir.

Pour sauce over seafood. Spoon entire mixture into lobster tail shells and top with cheese.

Broil in oven until golden.

Serves 4.
