Party Lobster
Party lobster is a good recipe for a small dinner party, and easily doubled or tripled for a crowd.
3 cups water 4 Tbsp lemon juice 1 tsp salt 4 lobster tails, fresh or frozen 3 Tbsp butter 2 Tbsp butter 2 Tbsp flour 1/2 cup sherry 1/4 tsp dry mustard 1 cup sour cream 2 cups cooked rice 1/2 cup fine bread crumbs 1/4 cup grated Swiss cheese
If you are using this as a recipe for frozen lobster tail, thaw the tails completely before beginning. Preheat oven to 400 degrees. Put water, lemon juice, and salt in a pot and bring to a rolling boil. Put the tails in the water, return to a boil, then reduce heat and simmer for 10 minutes. Take the tails out of the pot, and rinse them in cold water. Keep the liquid they were cooked in. Crack the shells, remove the meat, and slice into medallions. Melt butter in a frying pan. Mix in the flour. Stir in 1 cup of the liquid the tails were cooked in. Add sherry and mustard. Remove from heat. Stir in the sour cream and the lobster meat. Grease a square baking pan. Put rice in bottom of pan. The lobster mixture goes on top of the rice. Sprinkle bread crumbs and cheese on top of lobster mixture. Bake in oven for 15 minutes, or until cheese is melted. Serves 6.
