Lobster Tomalley Butter
Lobster Tomalley Butter is a quick and easy appetizer. But before you eat it, please do read about the health warning, then make your own decision whether you want to eat it or not.
For this appetizer recipe, the only ingredients you need are some lobster tomalley, some butter, and cayenne pepper. I don't give amounts, as you can adjust to suit your own taste as you make it. You can use tomalley that was cooked inside the lobster, which will save you a step. The last time I made this, was when I was trying out lobster sashimi for the first time, and I scooped the tomalley out of the raw lobster. Here's what it looks like when it is raw.
I chose to cook it in the microwave. It took about 40 seconds for the amount that I had. You might want to start at 30 seconds, and then see if it needs to cook any longer.
Once it was cooked, I added the butter, and mixed it together. The tomalley was still warm, so as I mixed them, the butter melted right into it. You should start with the same amount of butter as tomalley, and then gradually add more to get the right texture. I may have gone a bit over-board here, but then I love the taste of butter.
Mix in cayenne pepper to taste.
Spread on crackers, saltines, or toast points and serve.
