Lobster Tacos

Bring a taste of Baja California to your table with lobster tacos.
Lobster meat Salsa Guacamole Sliced avocado Sliced limes Corn taco shells Sour cream
I have not put amounts in this recipe, because it is really to taste. One lobster of one to two pounds will typically make two to three tacos, which is about right for one person. Put the meat in a bowl. Pour the salsa over it, and stir until well coated. Cover in put in the refrigerator for one to two hours. After the marinating time has finished, stir-fry the mixture in a frying pan for about two minutes, just until it is warmed through. Warm the taco shells in the oven. Place the sliced avocado in side of the taco shells, and put the meat next to it. Spoon additional salsa, guacamole, and sour cream over top, to taste. Garnish with sliced limes. Serve this with mexican rice or nacho chips. Or, have a buffet with a variety of different kinds of tacos. And of, course you need to have margaritas to drink! Sounds like a great summer night to me!
