Lobster Stuffed Mushroom Caps
Lobster Stuffed Mushroom Caps are a good choice for appetizers at a cocktail party.
16 large mushrooms caps (stem removed)
1 cup mushroom stems, chopped
1 tsp olive oil
2 Tbsp onion, diced
4 oz lobster meat
2 Tbsp bread crumbs
2 Tbsp mayonnaise
2 Tbsp parsley, chopped
1 Tbsp parmesan cheese, grated
1 egg
Pre-heat oven to 400 degrees.
Saute chopped mushroom stems and onion in olive oil until tender. Remove from heat.
Stir in lobster meat, bread crumbs, mayonnaise, parsley, parmesan cheese, and egg, mixing thoroughly. Spoon filling into mushroom caps.
Place mushroom caps on a shallow baking disk and bake for 15 minutes at 400. Serve warm.
