Lobster Pie
Just add a salad to Lobster Pie, and you have a full meal.
Single crust pie shell
3 Tbsp olive oil
3 Tbsp chives, chopped
1.5 cups cooked lobster meat
1 Tbsp tomato paste
Cayenne pepper
4 eggs
1.5 cups cream
1/4 cup grated cheese
Pre-bake pie shell according to recipe or package directions.
Preheat oven to 325 degrees.
Saute chives in oil for 1 minute. Add lobster and saute another minute. Add tomato paste and cayenne pepper. Bring to a low boil, stirring. Remove from heat.
Beat eggs. Stir in cream. Mix with lobster. Pour into pie crust. Top with grated cheese.
Bake for 25 minutes.
