Lobster Paella

Lobster Paella

A traditional spanish dish, lobster paella is a colourful and tasty addition to the table, and a nice version of a seafood paella recipe.

1/2 cup oil
2 cloves garlic, chopped
2 cups rice
2 tsp saffron
4 cups hot chicken stock
3 large tomatoes, cut in wedges
2 cups peas
6 artichoke hearts
2 bell peppers, chopped (any colour)
1 small chicken, cooked, disjointed (or use 2 large chicken breasts)
4 oz. chorizo or other hard dry sausage, sliced
2 cups lobster meat

Saute garlic in oil in a large heavy frying pan. Remove garlic from pan and add rice. Cook until brown, stirring often. Add saffron and stock to rice. Cook, covered, until rice is nearly tender. Stir in vegetables and meats. Cook for 10 minutes or until lobster is cooked.

For variety, add shrimp, clams, or mussels.

Serves 8.
