Lobster Fried Rice
When you want something different, lobster fried rice is a great option.
2 cups onions, chopped
1 clove of garlic, minced
1 Tbsp olive oil
4 eggs, slightly beaten
3 cups cooked rice
4 green onions, chopped
1.5 cups lobster meat, chopped
1 cup bean sprouts
3 Tbsp soy sauce
Saute onions and garlic in hot oil until tender. Remove from skillet and add eggs. Cook until firm, stirring constantly. Add rice, green onions, and lobster, and add onions and garlic back in. Cook until heated through. Add sprouts and soy sauce and mix well.
This is even better if you make it ahead of time and reheat it. You can also add other vegetables.
