Lobster Divan
By replacing the traditional chicken, lobster divan kicks it up a notch.
2 packages (10 oz each) frozen broccoli spears with butter sauce
1/4 cup onion, chopped
1 pound lobster meat, cooked
1 can (10 oz) cream of mushroom soup
3/4 cup shredded cheddar cheese
Preheat the oven to 350 degrees.
Cook the broccoli according to package directions.
Drain the butter sauce in a frying pan. Add the onion and saute until tender. Remove from heat and allow to cool. Stir in the mushroom soup and cheddar cheese.
Grease a casserole dish. Arrange the broccoli on the bottom. Put the lobster on the broccoli. Pour the soup and cheese mixture over top.
Bake in the oven for 15 to 20 minutes, or until thoroughly heated and the cheese is bubbly.
Serves 6.
This is good served with a crisp green salad, the crunch offsets this rich creamy cheesy dish very well.
