Lobster Curry

Try this delicious lobster curry recipe for an Indian version of a seafood dish. The curried lobster has a nice flavour without being too hot.

1 lb lobster meat
1/4 cup lemon juice
1/4 cup water
1 tsp sea salt
2 Tbsp olive oil
1 cup onion, chopped
3/4 cup celery, chopped
2 Tbsp chives, chopped
2 tsp curry powder
2 medium tomatoes, peeled and chopped
1/4 cup flour
1 cup of lobster or fish stock or chicken stock

Mix lemon juice, water, and salt in a bowl. Add meat and stir to coat completely. Cover and put in the refrigerator for 30 minutes. Drain liquid and set aside.

Saute the onion, celery, and curry powder in olive oil until tender. Add tomatoes and cook for one more minute. Add flour, chives, stock and marinating liquid and stir. Continue cooking, sirring continuously, until mixture has thickened. Stir in lobster and continue cooking until it is completed heated through.

Serve over hot rice.

Serves 4.
