Lobster Coquilles in Tomato Sauce
Though the ingredients may seem Italian, lobster coquilles is another recipe that originated in France.
2 Tbsp olive oil
2 shallots, chopped
2 garlic cloves, chopped
1 lb. lobster meat, cooked
28 oz. can diced tomatoes, drained
1 tsp oregano
1/2 cup mozzarella cheese, grated
Saute shallots and garlic in olive oil until tender.
Add canned tomatoes and oregano. Bring to a low simmer and cook for 8 minutes.
Add lobster meat and cook for 2 or 3 minutes, until lobster is warmed through.
Stir in cheese, and cook another 2 minutes.
Serve warm.
