Lobster Bites
Lobster Bites are encased in cream puff pastry - an elegant appetizer.
Pastry
1/2 cup water
1/4 cup butter
1/2 cup flour
Dash of salt
2 eggs
Filling
1 cup cooked lobster, chopped
1/2 cup celery, diced
1/4 cup mayonnaise
1 Tbsp lemon juice
Dash of pepper
Preheat oven to 375 degrees F.
Bring water and butter to a boil. Add flour and salt and stir. Mixture should stick together and form a ball. Remove pot from heat.
Add eggs, beating until mixture is smooth.
Using a teaspoon, drop mixture on baking sheet, 2" apart.
Bake for 25 minutes, or until golden brown. Cool. Cut tops off of pastry and set aside.
Combine lobster, celery, mayonnaise, lemon juice, and pepper. Fill bottoms of pastry and replace the tops.
Makes 24 bites.
