Baked Seafood Salad

A Baked Seafood Salad will warm you up on a cool day, and is great served with a dinner roll.

2 cups corn flakes
2 Tbsp butter, melted
1 cup cooked lobster meat
1 cup cleaned, cooked shrimp
1/2 cup green pepper, chopped
1/2 cup onion, chopped
1 cup celery, chopped
1 cup mayonnaise
1/2 tsp salt
1 tsp Worchestershire sauce
Dash of paprika

Preheat the oven to 350 degrees.

Crush the corn flakes lightly. You can do this without making a mess by pouring the measured corn flakes into a large zip-lock baggie and rolling a rolling pin over the bag gently. Once crushed, pour the corn flakes into a mixing bowl, pour the melted butter in, and mix them together.

Chop the lobster meat into bite size pieces or smaller. For most of my recipes I recommend fresh lobster meat, but this is one of the few that you can get away with using frozen or canned meat.

In another mixing bowl, stir together the lobster, the shrimp, the chopped green pepper, the chopped onion, the chopped celery, the mayonnaise, salt, and Worchestershire sauce. Stir until the seafood and veggies are mixed together, and evenly coated with the sauce.

Spread the lobster mixture in the bottom of a baking pan. Top with the corn flake mixture. Sprinkle with paprika.

Bake in oven for 30 minutes, or until the dish is warm in the middle.

Serves 6.
