Seafood Chowder
This seafood chowder is stuffed full of 3 kinds of seafood!
2 Tbsp olive oil
1 cup mushrooms, chopped
1 cup onions, chopped
1 clove garlic, chopped
2-5 oz. cans clams
2 cups chicken broth
1/2 cup dry white wine
1.5 cups potatoes, in bite size chunks
1/2 cup celery, chopped
1/4 cup chives, chopped
1/4 lb salmon fillets, in bite size chunks
1/4 lb mild fish fillets, in bite size chunks (such as haddock, halibut, cod, etc)
3/4 tsp basil
1 tsp Worcestershire sauce
1/2 tsp sea salt
1/2 tsp pepper
1/3 cup whipping cream
3/4 cup sour cream
2 Tbsp parsley
Saute mushrooms, onion, and garlic in olive oil until tender. Drain juice from clams and and add to mushrooms and onions. Transfer to stock pot, along with chicken broth, wine, potatoes, celery, and chives. Boil until potatoes are tender.
Add clams, fish, basil, Worcestershire sauce, salt, and pepper. Simmer until fish turns white. Turn heat to minimum and stir in whipping cream, sour cream, and parsley. Do not allow to come to a boil.
